I love fried food. This is no surprise. My favorite fried food? Pickles, it is most definitely fried pickles, preferably in chip form.

Ingredients:

  • ¼ cup all purpose flour
  • ¼ cup corn starch
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp garlic powder
  • a few shakes of Tabasco, to taste
  • a little bit of red and black pepper
  • 2/3 cups of water
  • oil for frying

Directions:

  1. In a small sauce pan, heat oil on medium.
  2. In a bowl, mix all dry ingredients. Then stir in the water and Tabasco.  The batter should be thick.
  3. Coat a pickle in the batter and place it into the oil.
  4. The pickles should be fried for about 1-2 minutes. (I usually have to flip over the pickles because I don’t use a lot of oil.)
  5. Carefully remove with a slotted spoon. Sprinkle with a tiny bit of salt.
  6. Enjoy!

Bacon Tomato Grilled Cheese

bacon tomato grilled cheeseIt’s no secret by now that I LOVE grilled cheese sandwiches. I probably should have a category just for all the grilled cheeses I have made. I made a bacon, tomato grilled cheese and ate with tomato soup and it was delicious. But how can you go wrong with melted cheese and bacon?

Ingredients:

  • 2 slices of bread
  • 1 slice Muenster cheese
  • 1 slice Colby Jack cheese
  • 2 pieces of bacon cut in half
  • 2 slices of tomato
  • butter

Directions:

  1. Fry up the bacon, I like to get it out of the pan something between limp but still cooked and so crispy that it crumbles easily. 
  2. Heat up the pan to medium heat
  3. Butter one side of each piece of bread
  4. Place one slice of bread butter side down onto the hot pan
  5. Put one slice of cheese followed by the bacon, then the tomatoes and then the other slice of cheese on the bread
  6. Put the other piece of bread on your sandwich, butter side up
  7. Flip the sandwich over, after the bread is a nice brown color on the bottom and the cheese closest to the pan is melted
  8. Remove the sandwich from the pan after the other side is brown and cheese is melted
  9. Enjoy!
*If it seems like your bread is browning before the cheese has melted, try turning down the heat and placing a lid over the pan for a minute to help the cheese melt faster. 

Fried Caprese Salad Recipe

Oh yes, this is another fried recipe and another caprese salad recipe combined into one, fried caprese salad. I wanted something fried and greasy but I also wanted to feel like I was attempting to be healthy. :/ So I made caprese salad and fried it. It was pretty good and satisfied my cravings but it’s not something I would make very often, just when I’m feeling the need for healthy and fattening at the same time. Does that make sense to anyone but me?

Ingredients:

  • tomato slices
  • mozzarella slices
  • fresh basil leaves
  • balsamic dressing
  • olive oil
  • bread crumbs
  • egg wash (1 egg 1/2  milk, whisked together)

Directions:

  1. In a small skillet, heat up about a tablespoon of olive oil on medium heat.
  2.  Stack the basil then mozzarella on top of a tomato slice.
  3.  Carefully pick the stack up and dunk in the egg wash.
  4. Coat in breadcrumbs.
  5.  Place in heated skillet, fry until bottom side is a golden to dark brown and flip to other side and fry.
  6. Place on plate and drizzle with balsamic dressing.
  7. Enjoy!

Fried Fish Recipe

My husband went ice fishing and brought back some fresh fish. The only problem was that it was already cleaned so I had no idea what kind of fish it was or how to prepare it. So I decided to make fried fish sandwiches. By now no one should be surprised I decided to fry it.

The amounts for everything are for 1 fish fillet. Do equal parts of flour and corn starch for more batter.

Ingredients:

  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • ~ 3/4 cup water
  • tabasco sauce (optional)
  • celery salt
  • red pepper
  • cumin
  • oil for frying

Directions:

1. Heat a couple of inches of oil, I used canola, in a small sauce pan.

2. In a small bowl, combine flour and cornstarch, season to taste and mix.

3. Add water and a couple shakes of tabasco (to taste, can omit), to the flour mixture and whisk until smooth

4. Coat the fish in the batter, and place in the oil to fry.

5. Fry for about 3 minutes on each side, until a nice golden brown. Remove with a slotted spoon. As you can see I didn’t put enough oil in the pan to where the fillet was completely submerged so I flip it.

6. Enjoy!

I like to make a sandwich out of it by placing it on a toasted bun, placing cheese on it right after it comes out of the oil so it melts and a little bit of tartar sauce.

How to Make Fried Chicken Bites

I love fried foods. As I’ve said before, I don’t own a frier because that would be so bad for me. But sometimes I just need some fried chicken. Is that just me? I made fried chicken bites for dinner and I thought I’d share.

I think my version is pretty easy. It can be a bit messy though. This time I used breadcrumbs I made from a loaf of bread from Panera, but I have used Panko and Progresso breadcrumbs as well as crushed Ritz crackers. I think I actually prefer the Ritz with some seasoning mixed into them and mixed into the flour/cornstarch bowl.

I could have left the chicken in bigger pieces or in stripes for chicken fingers but I like to chop it into smaller pieces because it cooks faster. Also, since it is the same thickness I don’t have to worry as much about some parts of the chicken being cooked and other parts still being raw.

For this recipe, the amount of everything depends upon how much you want to make. I was frying two chicken tender strips.

Ingredients:

  • boneless, skinless, chicken chopped up into bite sized pieces
  • corn starch
  • all-purpose flour
  • milk
  • egg
  • breadcrumbs
  • oil

1. In a small sauce pan, pour oil, I used canola, enough to make it about an inch or more deep. Again this depends upon your amount of chicken you’re frying.

2. Chop the chicken into bite sized pieces

3. In a bowl, mix 3 parts flour to 1 part cornstarch.  The cornstarch helps everything stick to the chicken better as opposed to just flour.

4. In another bowl, with a fork, whisk 1 egg with 1/4 cup milk

5. In yet another bowl have a lot of breadcrumbs.

The order is going right to left because my saucepan is to the left of the breadcrumbs and yes my counter is that tiny!

6. Now, coat in the flour, dunk in the egg wash, and cover with breadcrumbs the pieces of chicken.

7. Carefully drop the chicken in the oil to fry or else the oil could splash up.

Now my chicken wasn’t completely submerged in the oil, so I let it cook to a golden brown on the bottom, about 4 minutes and flipped them over with my tongs so the other side could fry an get a golden brown color as well.

7. With a slotted spoon, remove the fried chicken bites.

Now it’s time to enjoy the fried deliciousness. I prefer to dip mine in a ketchup ranch combo. Am I the only one who does that?

I know the coat, dunk, and coat mixtures work pretty well for fried pickles too. I wonder if they work for cheese balls. I need to try it because I am missing some Culver’s cheese curds.


How to Make Sweet Potato Fries

This really isn’t a recipe for sweet potato fries. Just a “How To” because the only ingredients I used were sweet potatoes and extra virgin olive oil. Sometimes you just really want to have something fried but don’t want to feel guilty about eating it afterwards. Maybe that’s just me; but here is an alternative to regular fries and using a fry daddy. It would be dangerous to my health, and I don’t have the counter space, to have a fryer because I love french fries and fried pickles! I’ll stick to the stove.

Sweet Potato Fries on the stove!

1. Scrub your potatoes! Veggies are pretty dirty in general, because they come from dirt and also you have no idea how many people have touched your food before you took it home. Ok rant over back to cooking.

2. I am not a big fan of skin so I peel it off. Sometimes I’ll leave a little skin on for a bit of a flavor change.

3. Chop it into fries! sweet potato fries

4. Put a couple tablespoons of olive oil in a skillet. Heat it up on medium heat. sweet potato fries

5. Put in the heated skillet. Cook it for about 10 minutes moving the fries around on a pretty constant bases until desired crispiness.
